Tofu Scramble

I love me a good tofu scramble. While I can't say it tastes exactly like egg scramble, it still tastes amazing.
It's packed full of plant based protein and veggies, making this a fantastic breakfast, lunch, or dinner. It's totally customizable too, add beans and salsa for a Santa Fe combo, or keep it traditional with some vegan ham and cheeze. The possibilities are endless!

Tofu Scramble
Total time: 15 minutes
Servings: 2
Ingredients:
1/2 tbs coconut or
vegetable oil
1/2 block tofu; drain, dried,
crumbled
1/4 bell pepper, chopped
1/3 cup broccoli/broccolini,
chopped
1 handful spinach, chopped
3/4 tsp turmeric
dash of paprika
salt and pepper
Method:
Cook tofu in the oil until
slightly crispy.
Add remainder of
ingredients and cook until
soften and spinach wilted.
Serve with toast or on it's
own.
