Soul-soothing Peanut Stew
I stumbled across this recipe in the Oh She Glow's cookbook, and it sounded like the perfect warm hug on one of our typical West Coast winter days, which if you've never experienced are very wet, grey, and dreary.
In typical me fashion, I realized that I didn't have a lot of the ingredients it called for, so let my creativity flow and used what I had; swapping carrots for peppers, and crushed tomatoes for diced (which I personally preferred). I love the subtle peanut taste, alongside the warmth of the chili powder. I feel like a dash of cinnamon would make this soup even warmer.
Adding rice really helps bulk this dish up, plus rice tastes delicious when it's soaking up a creamy sauce. This was a hit with the entire family and made enough leftovers to last me a couple days. It's a perfect meal prep recipe as it makes a lot and stores well, the flavours really deepen the longer it sits.
