Lentil Spaghetti

This is the perfect spaghetti recipe if you're looking for something wholesome and filling. The lentils replace the ground beef so well that my dad, who has always been a meat eater, exclaimed "you can't have that, there's meat in there!" when he saw me eating the spaghetti! I'll take that as a definite win ;)
This is the perfect meal if you're short on time, 20-30minutes and it's ready to go.

Lentil Spaghetti
Cook time: 25min
Serves: 6
Ingredients
1 package spaghetti
1/2 cup dried red lentils
1/2 onion, chopped
1 clove garlic, chopped
1 bell pepper, chopped
1 carrot, chopped
1 jar organic tomato sauce
1/2 jar water
1tsp oregano
1tsp Italian seasoning
salt and pepper
1 handful spinach, chopped
Method
Add spaghetti to boiling water and cook until al dente.
While pasta is cooking, sauté onion, garlic, carrots, and bell pepper until fragrant and a little soft.
Add lentils, sauce, water, and seasoning. Bring to a simmer, stirring every so often, until the lentils are cooked. Add spinach until wilted.
Serve over pasta or quinoa.
This recipe can be frozen before or after cooking!
